The only way you can achieve this is by filming it at an angle where your camera is just out of shot.
If you want a dead on POV/over the shoulder, your camera would have to be digitally painted out which doesn't seem worth it for one shot, does it?

If yopu want to film someone in the mirror, film them at an angle.
Get them to stand off center and look at the camera reflection... (Crude Ascii At coming up...)

|
&0= - Camera
(&0=) - Reflection of Camera
x-O - Actor
(x-O) - Reflection of Actor
. - Ignore (There to space the image out.
/\ - Direction of view
You may have to work out the angle yourself...
(I hope this makes sense.)

Anyone have any suggestions how I can get an over-the-shoulder or POV shot of a guy looking in a mirror?

hmmmm... Although I agree with the angle idea, which is most likely the only 'good' way to do it, you can also use a blue screen as the supposed mirror surface -though that would probably be more of an effort than it's worth, just like the 'edit camera out' method. However, if you desperately need a frontal close up of someone looking in a mirror, you could just film the actor and add a glassy mirror effect in post-production. It would look reasonably real if done right. But in fact I'd recommend that you just go for the out-of-angle option.

the way they did it in Evil Dead II when the "other" ash grabed bruce campbell is they didnt have a mirror, they just had a window, maded it look like a mirror by haveing the reverse of the set visable on the other side and a stand in for the back of the head, while the actor plays the reflection

Thats how they did it in Terminator 2. They had the frame of the mirror and on the other side of the wall they had a complete copy of the set. They then used look a likes and models of the actors and had them Sync there movies exactly. Its turns out to be a very cool shot.
